Daily Activity 23 April 2019 (English Version)

Hello Foodies! , welcome back to my blog. I'm gonna share you about my activity today. First, my team got soup Menu Of Japanese. It called tori tsumiru Jire. It's a chicken ball soup. And we must continued the jalangkote. But the jalangkote, we only need to fried them again until the color turn into golden brown. I arrived at kitchen in the morning and do the oneline until the supervisor absent us one by one. Then we discuss and sharing information about the japanese menu, because our group always rolling the menu, from the appitezer until dessert. So, we didn't cook the same menu every week.


After that some member of my team continued fried the jalang kote. And the other prepare for tori tsumiru jire. I take a basket and put the ingredients that we need. After that i continued make a white stock. But chef ichal call me , to help My friends Eman, to make a soft roll. So, i leave the prepare of tori tsumiru jiru to my friends and i continued make soft roll with eman. We prepare the ingredients and mix the dough using straigh dough method. Then proofing for 30 minutes. While proofing the dough, i continued help my friends prepare the tori tsumiru jire.


And then i see my friends who continue this day menu. And the appetizer, soup, and dessert is ready. The main course hasn't finish the crackers and the chilli. In a minutes, chef ichal coming and got mad because his friends already arrive but the food doesn't finish. We got punishment to clean the kitchen for 3 times. Well, it's our fault and we do the cleaning 3 times. We go home at 05:00 pm.

Hello guys. Welcome back lagi di my blog. And hari ini gue melanjutkan apa yang udah di prepare sebelumnya. Pertama tama gue fokusny ke beef stew, jadi daging yang sebelumnya sudah minced berbentuk dice. Di panaskan menggunakan teknik sous vide selama 90 menit kurang lebih dengan suhu 130°C. Beef nya di masukin ke dalam plastic roll yang tebal, kemudian sediakan air dalam stock pot dan memasang alat sous vide pada stock pot. Kemudian di set menggunakan mobile phone dan masukkan beef yang sudah di pres dengan plastic roll tebal lalu biarkan sampai waktu yang ditentukan.  Sambil menunggu, langsung memanaskan brown stock yang sudah jadi, sambil memblanch carrot. Kemudian mengsaute onion, carrot yang sudah di blanch, dan tomato sampai tender namun tidak gosong. Setelah brown stock siap, tambahkan ke dalam saute pan lalu mix hingga merata sambil menunggu beef.
