Welcome again to my blog!! And i'm gonna tell you something that very interesting. I'm learning how to make Pie Dough & Sugar Dough. Sugar dough we already known it for making cookies and pie dough we make it with cheese, smoke beef, bechamel sauce and etc.


Pie Dough
The ingredients that we need for making pie dough are flour, salt, butter, cold water and a little icing sugar. We use straight dough method for mixing the ingredients, but don't add the water first. Mix all of them until it look like a Sand.


Then add a little water and mix them until it look likes a dough but the texture is hard.
After that wrap it with plastic wrap and keep it in the cheeler for 10 minutes. After that rolling it and put it on the pie mould. And add bechamel sauce, smoke beef, and cheese. After that bake for 180°C in 15 minutes.


Sugar Dough
It's different from pie dough because it use too much icing sugar and maizena flour and egg. How to mix it, it's same like pie dough but it didn't need water. And keep it in the chiller for ten minutes .
After that bake it for ten minutes and cooling in down. And add some pastry cream. Next, bake it again for 15 minutes.


Here 's the recipe of sugar dough & pie dough :

Sugar Dough

Flour                        200 gr
Corn Strach            100 gr
Milk powder          1 tbsp
Butter                      150 gr
Eggs                         2 pcs
Salt                           1/4 tbsp
Icing sugar             2 tbsp

Procedure : 
1. Preparation a ingredients and tools
2. Mix flour, corn strach, milk powder, salt, icing sugar, and butter
3. Put the dough in bowl and keep in chiller for 10-15 minutes
4. To make easier to shape, roll the dough first
5. Brushing butter and dusting flour in the tarlet mould
6. Shape dough into the mould
7. Keep again in chiller for 15-20 minutes
8. After that, bake for 15-20 minutes in 170°C


Pie Dough

Pastry Flour           1000 gr
Shortening             700 gr
Salt                           20 gr 
Water                       300 gr

Procedure :
1. Collect all ingredients
2. Collect and scale ingredients
3. Dissolve salt in water. Set aside 
4. Place flour and shortening in mixing bowl
5. Rub or cut shortening into flour to the propper degree
6. Add salt and water. Mix very gently, just until water is absorbed. Don't overwork the dough
7. Place the dough in pans over in refrigerator or retarder for several hours
